A Week's Worth of Salads

So, I'm a bit of a salad freak. No, that's underselling it. I'm a salad freak.

I love me a good salad. Love of my life, maker of my salads, has put a great deal of effort into seeing my salad needs met over the years. One salad at a time. I'm pitifully grateful, but it's still an immense amount of work.

But a couple weeks ago, we discovered a hint about using vacuum packing to make a salad stay very fresh in the refrigerator for up to a week. We decided to try it, and holy [insert deity, idol, or profanity here], it not only works, a 7-day old vacuum packed salad is in a lot better shape than one that's just been sitting in your basic tupperware overnight. Still crunchy and fresh and awesome.

So here for your edification (and/or amusement) is a weeks worth (for me) of salads. The benefits — they're ready when you are, there's only one salad making event per week. Much less work, and a salad as many times as you want one, any time you want one. Take it out of the refrigerator, shake it until the dressing is well distributed, and consume.

Deb says the only trick to it is to put the dressing in the bottom, then the crispy veggies like radishes and carrots, and lettuce at the top (so it doesn't soak in the dressing.)

The jars are standard tempered Mason (canning) jars, and we obtain the vacuum using this device with this adaptor.

Thus far: sliced eggs, carrots, onions, lettuces, olives green and black, radishes, celery, palm hearts, pickled beets, sliced and cherry tomatoes, blue cheese and french dressing, and gorgonzola cheese have all come through with shining colors. Er, flavors.

I eat them right out of the jar half the time. That saves a little work too.
